Smoky Ketchup-based BBQ Wings

Description: I'm no chicken magician but these smoky ketchup-based barbeque wings are seriously some of the best chicken wings I've ever made! Try these out and see if you agree!
Yield: Makes 2-3 servings
Ingredients:
Wings:
1 pound of party wings
2 tsp baking powder
1 tsp black pepper
½ tsp fine sea salt
1 tsp Garlic powder
Garnish: Lemon Wedges, Parsley
Optional Accompaniments: Celery and/or carrot sticks, ranch or blue cheese dressing.
Instructions:
Preheat oven to 425 degrees F.
Line a baking sheet with aluminum foil or parchment paper. Spray the foil with non-stick spray.
Use paper towels to pat the wings dry and place them in a large bowl. It's important to dry them REALLY well!
Combine spices in a small bowl. Then sprinkle the seasoning over the wings, tossing to evenly coat. I like to massage in the seasoning to each wing a bit to really get it in there =)
Arrange wings, skin side up, in single layer on foil. Bake on the middle oven rack for 30 minutes, turning every 15 minutes .
After 30 minutes, add a layer of the sauce to the top and cook for 15 minutes more. Then flip the wings, sauce the other side, and cook again for 10 minutes.
With the last 5 or so minutes of cooking, turn the temperature up to broil. You MUST monitor this step closely to make sure you do NOT burn the sauce, but you do want it caramelized nicely with only a little char on the wings. The total cook time will depend on the size of the wings but may take up to 1 hour.
Remove the wings from the oven and allow to cool for a couple of minutes before serving. Serve garnished with parsley and lemon wedges. Enjoy!
