Oven Roasted Boneless Skinless Chicken Thighs

Description: These quick and easy baked chicken thighs can be used for as as the main protein for a variety of different recipes.

Yield: Serves 4-6

Ingredients:

  • 2 lbs Chicken Thighs

  • ½ tsp salt

  • 1 1/2 tsp black pepper

  • 1 tbsp garlic powder

  • 1 tsp Paprika

  • ½ tsp cayenne pepper (optional)

  • 2 tbsp avocado or other high heat cooking oil

Directions:

Preheat oven to 425°F . Line a baking sheet with parchment paper or a silicone baking mat, and set aside.

Mix the seasoning in a small dish and set aside. Use the 2 tbsp of olive oil to coat all of the chicken. Spread out the chicken onto the lined baking sheet. Evenly season both sides of each piece of chicken with the spice mix.

Cook for 20-30 minutes, depending on the size of your chicken thighs or until internal temperature reaches 165 degrees. I only had smaller chicken thighs in this batch, so I only needed to cook the entire batch for 25 minutes for it to reach the correct temperature and doneness. Remove to a covered dish and let sit for 5 minutes before slicing.

Serve this with any side dish you may want to eat with this, such as a quick green salad or roasted vegetables. These baked thighs are also delicious chopped up for tacos, burritos, and sub-style sandwiches!!!
