Roasted Brussel Sprouts

Description: Need a quick vegetable to serve as a side dish for your meal? Look no further than these lemony, roasted Brussel Sprouts.

Yield: makes 2 side dish servings.

Ingredients:

  • 1 lb of Brussel Sprouts, trimmed and halved

  • 2 cloves garlic

  • ¼ tsp red pepper flakes

  • ¼ tsp fine sea salt

  • ¼ tsp black pepper

  • 2 tbsp lemon juice

  • 1 tsp lemon zest

  • 1 tbsp refined avocado oil (or other high heat oil for roasting)

  • 1 tsp melted butter + 1 tsp extra virgin olive oil, for drizzling at the end

Directions:

Preheat the oven to 400°F. Line a baking sheet with parchment paper.

In a medium size bowl, add everything (except the lemon zest, melted butter, and olive oil) together in a bowl, and toss to coat. Arrange in a single layer on the parchment paper. Roast for 15-20 minutes or until browned.

After roasting, drizzle over the melted butter and olive oil. Sprinkle over the lemon zest. Serve.
