Roasted Brussel Sprouts

Yield: makes 2 side dish servings.
Ingredients:
1 lb of Brussel Sprouts, trimmed and halved
2 cloves garlic
¼ tsp red pepper flakes
¼ tsp fine sea salt
¼ tsp black pepper
2 tbsp lemon juice
1 tsp lemon zest
1 tbsp refined avocado oil (or other high heat oil for roasting)
1 tsp melted butter + 1 tsp extra virgin olive oil, for drizzling at the end
Directions:
Preheat the oven to 400°F. Line a baking sheet with parchment paper.
In a medium size bowl, add everything (except the lemon zest, melted butter, and olive oil) together in a bowl, and toss to coat. Arrange in a single layer on the parchment paper. Roast for 15-20 minutes or until browned.
After roasting, drizzle over the melted butter and olive oil. Sprinkle over the lemon zest. Serve.
