Thanksgiving Sweet Potato Hash-brown Breakfast

Ingredients:
2/3 cup chopped turkey meat (light or dark); from Herb Butter Roast Turkey + Gravy Recipe
2-3 eggs, prepared according to your own preference.
1/3 cup left over Butter & Herb Stuffing
1/2 a medium sweet potato, shredded, (about 1 cup)
2 teaspoons avocado oil, divided
2 tablespoons shredded Cheese (mild or sharp cheddar, or Colby/Colby jack) (optional)
2-3 tablespoons leftover gravy; from Herb Butter Roast Turkey + Gravy Recipe
Black Pepper, Salt, garlic powder, dried parsley, to taste
hot pepper sauce (optional)
Instructions:
Preheat the oven to 325 degrees and a frying pan to medium heat. Add oil to the frying pan.
Line a baking sheet with parchment paper. Add the leftover stuffing (uncovered) and leftover turkey (wrapped in another piece of parchment paper) to the baking sheet and bake for 10 minutes to warm up while the potatoes are frying.
Add the shredded sweet potatoes to the pan. Sprinkle a bit of salt and black pepper over the sweet potatoes and form them up into a wide patty about 2 inches in diameter and press down into the pan with a spatula.
Fry the hash-browns 4-5 minutes on each side or until browned and crispy, flipping only once. Remove the hash-browns to a serving dish and set aside.
Add a bit more oil to the same hot pan. Crack two eggs into the pan and immediately turn the heat down to low. Sprinkle a bit of black pepper, garlic powder, and dried parsley on the egg. Cover the pan.
After 10 minutes, turn the oven off but leave the stuffing in the oven to stay warm while you prep the rest of the breakfast.
Cook the eggs for 3-4 minutes or until the yolk begins to set but is still jiggly. Remove the pan from the stove but keep it lidded while you assemble the breakfast together.
Warm the leftover gravy in a separate dish in the microwave for 20 seconds or so, then set aside.
Assembly:
Add the hash-browns to the plate first. Then, crumble the stuffing into bite-size pieces and add on top of the hash-browns.
Then, sprinkle the turkey meat on top of the stuffing layer. Next, add the fried eggs in the center of the mound.
At this point, sprinkle on cheese (if using cheese).
Now, drizzle over the gravy, and then add hot sauce if desired. Serve with fresh fruit. Enjoy!
