Thanksgiving Turkey Sandwich

Description: One of my favorite ways to use up leftover Thanksgiving turkey and sides is to make this over-the-top Thanksgiving Turkey Sandwich! Mmm mmm good!

Yield: Makes 1 Sandwich

Ingredients:

  • 1 Kaiser roll or burger roll (can use any kind of roll)

  • ½ cup Dark or white meat Turkey chunks/shreds

  • 1/3 cup Arugula

  • 1/4 cup leftover dressing/stuffing

  • 1/4 cup green bean casserole

  • 1 tablespoon cranberry sauce, for turkey topping

  • 2 tablespoons gravy, for dressing topping

  • 1 tablespoon butter, softened

  • a few pieces of leftover turkey skins

  • a bit of oil, for pan frying

Instructions:

Preheat oven to 350.

On a parchment paper lined baking tray, add your stuffing/dressing and green bean casserole. Add the leftover gravy on top of the stuffing. Bake for 5 minutes

While the stuffing and casserole are warming, preheat a small pan to medium heat and add a touch of oil. Add the turkey skins to the pan, being sure to stretch out the skins on the pan surface. Fry the turkey skins roughly 3-4 minutes or so on each side until it crisps up nicely, and the skins get golden brown and crackly. Once you’ve fried them sufficiently and very little, if any, fatty white parts have all rendered and browned, removed them from the pan onto a small dish lined with a paper towel and set aside.

While the skins are frying, butter both inside surfaces of the Kaiser roll and set aside. Cut up or pull apart your dark meat turkey and prep the arugula. Mash together the turkey enough to form roughly the shape of your bread/roll. Add the formed-up turkey and the roll, buttered side up, to the pan. Then top the turkey with the cranberry sauce.

Bake everything for another 5 or so minutes until the roll/bread is toasted.

Assembly:

On bottom part of the buttered toasted Kaiser roll, add arugula and press down to mash the arugula onto the bread a bit.

Next, add the green bean casserole on top of the arugula. Press down, trying to keep the beans within the bun as best you can.

Then, add the shredded turkey and press again.

Then add the gravy-baked dressing, then top off the mound with the fried turkey skin. add the top part of the roll, and mash down a final time to secure everything as much as possible.
