Sweet Sunshine Chex Mix

Description: Looking for a summer inspired Chex mix to satisfy that snack attack? Here is a great citrus inspired “Chex mix” of sorts to scratch that itch.

Yield: Recipe makes 2-4 servings

Ingredients:

  • 1 - 2.5 oz bag of Pork Rinds

  • 1/4 cup Cashews, Almonds, and/or pistachios (or preferred nuts)

  • 1/4 cup Coconut Flakes

  • 1/3 cup Powdered sugar

  • 2 tbsp Lemon Powder

  • Zest of 1 lemon

  • 2 tbsp Orange Powder

  • Zest of 1 Orange

  • ¼ tsp nutmeg

  • 1/4 tsp fine sea salt (optional)

  • Coconut oil spray or preferred cooking spray

Directions:

Line a baking sheet with parchment paper. Add the nuts, and coconut flakes to the baking sheet. Toss to mix up.

Toast at 325°F for 8-10 minutes or until the mixture starts to brown a bit. Remove from oven.

While this is toasting, mix together your powdered sugar, lemon powder, orange powder, both zests, salt, and nutmeg. Set aside. Also, break up any bigger pork rinds into smaller bite size pieces, and set aside.

Remove the baking sheet from the oven. Add the toasted nut mixture to a big heat-safe mixing bowl, while still hot. Add in the pork rinds.

Using cooking spray, alternate between spraying the mixture with the cooking spray to coat all the pieces with “sticking agent”, and sprinkling some of the citrus sugar over the mixture. Use a big wooden spoon or other big stirring utensil to stir while simultaneously using your other hand to sprinkling the sugar. I did this alternating method of spraying cooking spray and adding the citrus sugar a total of 3 times to get good coverage of the sugar on the trail mix.

Transfer the finished trail mix to a serving bowl. Serve.
