Description: This smoky, savory, and sweet breakfast sandwich made with ham, eggs, and roasted red peppers is packed full of flavor and always hits the spot!

Yield: Makes 1 sandwich

Ingredients:

Sauce:

  • 2 tsp mayo

  • 2 tsp mango chutney

  • 1 cap full of liquid smoke

  • 1 tsp Dijon mustard

Sandwich:

  • 2 slices Sourdough Bread

  • 4-6 oz sliced ham

  • 2 eggs

  • 1 tsp butter, for frying eggs

  • 1 tsp oil, for frying ham

  • Roasted Red pepper, several strips

  • Garlic powder, for toast

  • dried parsley, for toast

Directions:

Preheat the oven to 350. Preheat 2 small frying pans to medium heat. Add a touch of oil to one the pan, and the butter to the other pan.

Add butter to both sides of each piece of bread. Place on baking sheet lined with parchment paper. Lightly sprinkle the side facing up with garlic powder and dried parsley. set aside.

Toast bread on middle rack for approx 10 minutes (from frozen) or 6-8 minutes (from fresh) or until toasted on both sides.

While the bread is toasting, fry the ham in the pan with the oil for about 3 minutes on both sides to brown and caramelize a bit.

Once the butter in the other pan has started sizzling, crack both eggs into the pan. After the edges of the eggs begin to set after the first minute of cooking, pierce the yolks of the eggs. Start pushing the edges of the eggs in to form the shape of your bread. Cover the eggs with a pot top or foil and turn the heat to low.

Mix up the sauce and set aside. By now the ham and bread should be done and you can start assembling the sandwich.

Add a shmear of the sauce to both slices of toasted bread. Top one slice of the bread with the ham, then the red peppers, then egg on top. add the other slice of sauced bread on top. enjoy!
