Summer Fruit Salad

Description: This creamy, dreamy, cool and refreshing summer fruit salad is a decidedly different twist on the classic southern ambrosia salad! One bite and you're sure to come back for more!

Yield: Recipe serves 2-3

Ingredients:

  • 1 1/2 cups (12 oz.) Pineapple, chunked

  • 4 Apricots, pitted and chunked

  • 2 Mangos, Peeled, pitted and chunked

  • 1 1/2 cups (12 oz.) Strawberries, stems removed and sliced

  • 1 Tablespoon lemon juice

  • 1/4 teaspoon of ground nutmeg

  • 3 Tablespoons fresh Mint, thin sliced

  • 2/3 cup (6 oz.) Whipped Cream

  • 1 teaspoon coconut flavoring or coconut extract

Directions:

Add all chopped fruit, lemon juice, coconut flavoring and sliced mint leaves to a bowl and give it a good stir. Add the nutmeg and stir again to combine. Finally, fold in the whipped cream.

Allow to chill in the fridge for 30 minutes. When ready to serve, top with additional chopped mint leaves. Serve!
