Description: Want an easy single-serving fruit salad to go with a summer meal? Look no further than this tangy, sweet, and refreshing salad made with mango, kiwi, strawberry, and mint is sure to be a winner!
Yield: Recipe make 1-2 servings
Ingredients:
2 Kiwis, peeled and chunked
1 mango, peeled, pitted, and chunked
6-8 Strawberries, stems removed and halved
2 Tablespoons fresh mint, thin sliced
1 teaspoon raw honey, melted
2 teaspoons fresh lime juice
1/8 teaspoon ground nutmeg
Pinch of Cayenne Pepper
Garnish: Mint sprig and/or lime wheel
Directions:
Add the prepared chopped fruit to a mixing bowl. Whisk together the melted honey and lime juice together until combined. I prefer using melted honey so that it can be easily incorporated into the lime juice. Pour this over the fruit in the bowl and toss to combine.
Sprinkle in most of the thinly sliced mint, reserving some for topping. Sprinkle over the ground nutmeg and cayenne pepper. Toss to combine.
Transfer fruit salad to a serving bowl. Top with remaining sliced mint. Add any garnishes and serve! Enjoy!
