Description: This full-flavored ham fried rice is the perfect way to use up leftover ham and vegetables. Try it out and see for yourself!

Yield: Makes 1-2 servings

Ingredients:

  • 4 ounces cubed ham

  • 1-2 eggs scrambled

  • 1/4 white onion, diced

  • 2-3 Tablespoons frozen peas

  • 1 medium stalk of celery, chopped into small angular pieces

  • 1 cup broccoli florets

  • 2 stalks green onions, chopped (reserve some for topping)

  • 1 cup white rice, precooked and previously chilled

  • 1 Tablespoon soy sauce

  • 1 Tablespoon chicken stock

  • 1 Tablespoon + 2 tsp avocado oil, separated

  • 1 tablespoon seaweed granules

  • 1 teaspoon toasted sesame oil, for topping

  • 1 teaspoon garlic powder

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon dried cilantro

  • 1/8 teaspoon cayenne pepper

Instructions

Heat 1 teaspoon of oil in a wok or frying pan. Beat the eggs in a small bowl and add to the pan when the oil is hot.

Stir gently with a silicone spatula or wooden spoon just until cooked. Transfer to a small bowl and set aside.

Add another teaspoon of oil to the pan. Add peas, carrots and ham and saute for several minutes. Remove to the bowl with the eggs.

Add another tablespoon of oil to the pan over medium high heat. When the oil is hot, add the rice and toss every 30 seconds until it's lightly browned, about 5 minutes.

Add the chicken stock, soy sauce and green onion and toss to combine. Return eggs and veggies to the pan, and continue frying for another minute or so to bring all the flavors together.

Remove from the heat. Add to a serving plate. Drizzle over the toasted sesame oil, and top with reserved green onions. Enjoy!


Notes: Fried Rice is best made using leftover cooked and cooled rice works best. You could also make fresh rice earlier in the day and refrigerate it for several hours until cold. It is easiest to use fingers wet with water to separate the rice grains.
