Grilled Cheese Sandwich

Description: A lot of us are well acquainted with the grilled cheese sandwich and this has become my go-to version of the classic sandwich!

Yield: Recipe makes 1 sandwich

Ingredients:

  • 2 slices Multigrain Bread (or preferred bread)

  • 1 slice Gouda Cheese (or other full-flavored cheese like Muenster)

  • 1 slice Pepper Jack Cheese (or other spicy cheese)

  • 2 tablespoons Mild Cheddar Cheese, shredded

  • 1 tablespoon Dijon Mustard

  • 1 tablespoon + 1 teaspoon butter, room temperature, divided

Directions:

Preheat a small pan on med-low. Add the teaspoon of butter to the pan.

While the pan is heating, evenly spread butter on one side of each slice of bread and set the butter sides down on parchment paper.

Spread the Dijon mustard over the non-buttered side of the bread. Leave the leave the mustard side up, and set aside.

Add both slices of bread, buttered side down, into the pan. Top each bread slice with one of the sliced cheeses. Then, sprinkle a little bit of shredded cheddar on both pieces.

Cook, open faced, with the lid on the pan, for 3-4 minutes to better melt the cheese.

Then, remove the lid and continue cooking for another 3-4 minutes or until bread has browned on the bottom.

Flip one cheesy bread slice onto the other piece of bread, and cook another 30-60 seconds to pull things together.

Remove from the pan to a serving plate. Serve and enjoy!
