Description: Fried potatoes of any kind are generally regarded as tasty appetizer or side dish to any meal! The zesty, cheese-like flavor of the spice mix in this recipe take traditional fried potato wedges up a notch!

Yield: Makes 3-4 servings

Ingredients:

  • 2 pound medium potatoes, cut into wedges (any variety)

  • 4 cups safflower oil, peanut oil, or other high heat frying oil

  • 2 Tablespoons nutritional yeast

  • 1 Tablespoons garlic powder

  • 1 teaspoon old bay seasoning

  • 1 teaspoon cayenne pepper, or to taste

  • 1 teaspoon dried parsley

  • 1/2 teaspoon fine salt

Directions:

Mix seasonings and set aside

In medium pot, heat oil to on medium heat to 350°F. Use a food thermometer to monitor the temperature.

While the oil is heating up, mix up the garlic powder, old bay, cayenne pepper, nutritional yeast, and saltrinse and slice potatoes into wedges. Lay wedges on a clean cloth or paper towel for 10 minutes to dry a bit. Be sure that the wedges are dried off to remove excess moisture before you begin frying.

Slowly add the wedges a few at time to the oil, adding about a handful at a time. Do not overcrowd the pot as it will reduce the overall temperature and the wedges need to fry at a constant temperature to have that “deep” fried crispness at the end. Fry in small batches, frying each batch for 4-5 minutes until browned and crisp.

Prep a wire strainer or non-plastic bowl with a paper towel to absorb excess oil as fried wedges are removed from oil. As each batch is removed into the strainer, sprinkle them with a bit of the seasoning mix. Repeat until all batches are fried. Serve immediately.
