Strawberry and Fig Salad

Description: The combination of figs, strawberries, walnuts, and goat cheese was a pleasant surprise in this fall inspired salad! Try it out and see for yourself!
Yield: Makes 1 salad (as a main dish) or 2 salads (as side dishes)
Ingredients:
1 cup fresh Strawberries, stems removed and halved
4 medium size fresh Figs, stems removed and cut into eighths
2 ½ ounces (1/4 of a log) crumbled Goat cheese
8 ounces 50/50 baby spinach & spring mix
1/4 cup walnuts, chopped
Dressing:
1 tablespoon extra virgin olive oil
2 tablespoons balsamic vinegar
1 teaspoon honey or maple syrup
1/2 teaspoon Dijon mustard
1/2 teaspoon garlic granules (or garlic powder)
1/4 teaspoon sea salt
1/8 teaspoon ground black pepper
Directions:
Add the Spring Mix to a bowl.
Next add the halved strawberries and quartered figs, spreading around evenly.
Then sprinkle over the crumbled goat cheese and candied walnuts.
Drizzle over the balsamic dressing. Toss to coat. Enjoy!
Notes:
I made the balsamic dressing noted above to go with this salad but forgot to dress the salad and/or include the salad dressing for the picture.
