Description: Start your summer morning off right with this healthy and delicious jazzed up orange juice that makes you feel like you're drinking “sunshine in a glass”.
Yield: Makes approximately 4 cups of juice.
Ingredients:
2 lbs carrots (about 3 ½ cups chopped, makes approx. 5 oz carrot juice)
8 medium golden Beets, peeled & chunked (about 3 cups chopped, makes approx. 10 Oz beet juice)
4 large oranges (approx. 1 1/2 cups orange juice)
1 lemon
6 - 1 inch thumb-size pieces of ginger (approx. 2 oz of ginger juice)
2 thumb size nugget of Tumeric Root, peeled and chopped
1 tbsp Raw Apple Cider Vinegar
1/8 tsp Pinch of Cayenne Pepper (optional: add to individual servings when ready to consume)
Directions:
Wash your fruits and vegetables first and set aside. If needed, cut up everything prior to starting the juicing process which makes things go a bit more efficiently.
I use a masticating (slow press) juicer that has a narrow feeding tube so I need to cut everything up into smaller pieces that will easily fit the narrow feeding tube. The operating instructions with my juicer say to alternate between hard and soft fruits and vegetables for best results, so that's what I do. I like to just chop everything then mix everything together in a big bowl and keep feeding from the bowl to the tube until the bowl is empty. Refer to the instructions provided with your juicer for best practices when operating your particular juicer.
The output of my juicer still produces quite a bit of pulp, even on it's lowest pulp setting, so I also have a double filter station set up next to the juicer. As the juice compartment fills up, I strain that out into a large bowl with a pour spout, using a bigger standard mesh strainer to filter out the bulk of the resulting pulp first. Then, using a super fine mesh strainer, I alternate between pouring the juice into the strainer and pressing the juice directly into the mason jars that will be used to store the juice.
Juice will keep in cold fridge for 3-4 days or in the freezer for up to one month. If freezing, store in plastic containers as freezing the juice in glass containers might cause the glass to break as the freezing liquid expands in the glass.
