Chorizo Queso Dip

Yield: Recipe makes roughly 4 cups of dip.
Ingredients:
Browned Chorizo:
1 Tablespoons avocado oil
1/2 lb Mexican style chorizo sausage
1/2 medium yellow or white onion, minced
1 jalapeno, seeds removed, minced
1/4 teaspoon cumin
¼ teaspoon fine sea salt
Queso Cheese Sauce:
1 Tablespoon avocado oil
1/2 yellow or white onion, minced
1 red chili pepper, seeds removed, minced
1 jalapeno, seeds removed, minced
2 Tablespoons all purpose flour
2 cups heavy whipping cream
1 1/2 cups of milk
1/2 lb American cheese chopped
8 oz. Monterrey Jack cheese, shredded
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
2 teaspoons smoked paprika
1/4 teaspoon fine salt, to taste
Homemade Tortilla Chips
Instructions:
Preheat a medium pan with a bit of oil over medium heat. Take the chorizo sausage out of the skin and break it apart as much as possible.
Add diced onion, minced jalapeno, and sausage to the pan. Saute everything mixing and breaking up the clumps of chorizo as much as possible. Season with cumin and salt, mix well, cook until chorizo is done. Remove sausage from pan to a bowl and set aside, covered.
In the same pan, heat up a little bit more oil over medium heat.
Add diced onions, jalapeno, and chili pepper, and seasonings for the sauce, and cooking, stirring occasionally for 4-5 minutes, or until softened. Sprinkle flour over the vegetables and stir continuously for 2-3 minutes more to cook out the flour flavor.
Slowly pour in heavy whipping cream while stirring. When heavy cream is heated through and just begins to simmer, start adding cheeses one handful at a time. Keep stirring slowly until cheese is melted and smooth.
Remove the queso sauce from the heat. Transfer queso into a large serving bowl and top it off with cooked chorizo. Make sure the bowl is big enough to fit all of the sauce and the browned meat.
Garnish the sauce with hot sauce. Serve with Homemade Tortilla Chips.
