Tots & Eggs Special
This magical tater tot breakfast is on of my favorite breakfast meals to make and the flavor combinations in this dish are outrageously good.
Ingredients:
1-2 Serving of tater tots, according to package directions
4 oz pepperoni, sliced into ribbons
2 eggs, Sunny Side up
1-2 tbsp of Ultimate Sauce
1 tsp Mayo
1 tsp Ketchup
1-2 tsp sriracha, to taste
1-2 tsp water, enough water to reach pourable consistency for drizzling
1/2 tsp garlic powder
1/2 tsp old bay seasoning
1 tsp dried parsley
1/2 cup of mixed shredded cheese (smoked gouda, cheddar, and mozzarella)
1 stalk of green onion, thinly sliced
1/2 tsp extra virgin olive oil, for drizzling
1/2 tsp high heat oil, for cooking
Directions:
Spray foil and tater tots with cooking spray. Sprinkle the old bay and the garlic powder on the tater tots, and mix. Baked tots on sheet pan at 425 for 20-25 minutes or until golden brown.
After the tots have been cooking for approximately 10 minutes, preheat a small frying with a bit of cooking oil. Fry the pepperoni strips on medium heat for 5-10 minutes or until crispy like bacon and the fat has rendered. Set aside in a covered dish.
In the same pan with the pepperoni drippings, keep the heat on medium. Crack 2 eggs into the pan, let fry for approximately 30 sec or until corners of whites start to crisp up. Turn heat to lowest setting, cover loosely with a top or foil leaving a bit of room for air to escape, and cook on lowest setting for 3-4 minutes, or until yolks just begin to set.
For the magic of this dish, the yolks MUST still be a bit runny when you plate them. The runny yolk combines with the ultimate sauce, making it more silky and rich. Very satisfying breakfast treat, indeed.
Add the pepperoni and shredded cheese on top of the tots in the oven for the last 5 minutes of cooking. Remove the tots, and top with the fried egg. Drizzle over the ultimate sauce, the green onion, and olive oil. Serve.
Notes:
Recipe should take approximately 25 minutes from start to finish.
Substitutions:
You can substitute crispy pan-fried potatoes or shredded hashbrown potatoes, or even sweet potatoes in place of tater tots.
I’ve also tried this dish over cooked rice instead of tater tots, which was also delicious.
For a lower carb version, fry up some root vegetables like beets or carrots, or stalky vegetables like Asparagus instead of tater tots.
