Ramekin Peach Cobbler

Description: If you love peaches, then you're sure to love these individual ramekin baked peach cobblers. They are perfect single serving summer desserts that are sure to satisfy that after-dinner sweet tooth!

Yield: Recipe makes 2-8 ounce ramekin cobblers

Ingredients:

Topping

  • 1/2 cup Extra Fine Almond Flour

  • 2 Tablespoon milk (or any variety of milk)

  • 1 teaspoon baking powder

  • 1/8 teaspoon salt

  • 2 Tablespoons melted butter

  • 2 large egg

  • 1/4 cup light brown sugar (or granulated sugar or brown sugar)

  • 2/3 cup pecans, roughly chopped

Filling:

  • 3 medium peaches, peeled and chopped

  • 1/4 cup light brown sugar (or granulated sugar or brown sugar)

  • 2 teaspoon vanilla extract

  • 1/2 Tablespoon ground cinnamon

  • 1/2 teaspoon salt

  • 2 Tablespoons unsalted butter, melted

  • 1/2 teaspoon nutmeg

  • 2 teaspoon Lemon juice

  • 1 Tablespoons cornstarch, as thickener

Equipment:

  • 2 – 8 Oz Ramekins

  • 2 mixing bowls

Instructions:

Preheat oven to 350°F and grease the ramekin dishes with a bit of oil or cooking spray. Set aside.

Topping

In a bowl, mix together the sugar, vanilla, cinnamon, baking powder, baking soda, salt, flour, milk, egg and melted butter until combined. Set aside.

Filling

In a large bowl, gently toss peaches with vanilla extract, brown sugar, lemon juice, melted butter, cornstarch, cinnamon, nutmeg, ½ of the pecans, and salt, and mix until evenly coated.

Split the peach mixture into the prepared ramekins, then pour over the batter mixture onto each ramekin. Top both ramekins with the remaining pecans.

Bake in preheated oven for 35-40 minutes or until peaches are tender and the topping is golden brown.

Let sit for 10 minutes to thicken slightly, then serve plain or with ice cream! I like to serve these with my Coconut Milk Ice Cream Recipe

Notes:

The amount of topping for this recipe produces thick top crusts. If you prefer a thinner top crust, cut the total flour by ½ and use one egg instead of two.

Variations: This cobbler is very versatile and works with many fruits. Feel free to substitute blackberries, blueberries, marionberries, or raspberries instead of peaches.
