Pumpkin Oatmeal Cookie Ice Cream Sandwich

Description: I love ice cream desserts of all kinds and this fall-inspired ice cream sandwich made from homemade oatmeal cookies, pumpkin butter, and vanilla ice cream is well worth the effort!

Yield: Recipe makes 1 ice cream sandwich

Take the ice cream out of the freezer and set on the counter for a few minutes, with just enough time to thaw enough to make it easier to scoop if needed. Some ice creams are softer and easy to scoop by default so you may not need to let it thaw.

Spoon 1 tablespoon of pumpkin butter on the bottom side of each cookie and set aside. Then, add the ice cream on top of the pumpkin puree of one of the cookies. Using the other cookie, press down a bit on top of the ice cream to secure.

Serve immediately!

Notes:

If you prefer the ice cream in your sandwich to firm up a bit before enjoying, wrap in plastic wrap and freeze for 1 hour before eating.

Store these sandwiches wrapped in plastic wrap in the freezer for up to two months.
