Iced Mint Tea

Description: Nothing like a refreshing, ice cold glass of sweetened mint tea with lemon to cool off those hot summer days. If you like mint, you'll love this tea as much as I do.
Yield: Makes 64 oz of Iced Tea.
Ingredients:
2 oz Fresh Mint Leaves (about 57g) + a handful of mint leaves to mix in at the end
8 cups water, filtered
2 lemons, sliced.
¼ cup Raw Apple Cider vinegar
½ cup preferred sweetener, or to taste (optional)
Directions:
Add 4 cups of the water to a pot and quickly bring to a boil over high. Once boiling, remove from the heat, add 2 oz mint leaves, and brew covered for 7 minutes.
Strain the mixture into your serving pitcher. If adding sweetener, add it at this point while the mixture is still warm so it will dissolve easier.
Add the other 4 cups of water and the lemon slices. Allow to cool completely outside of the refrigerator first, otherwise it may develop a cloudy look, but it would still taste good.
Once cool, refrigerate for at least an hour to chill before serving. When ready to serve, mix in the fresh torn mint leaves and serve.
