Description: If you like banana bread, I think you'll love these high fiber Banana Bread Breakfast Cookies, made with walnuts, chia seeds, flax meal, hemp seeds and chocolate chips!

Yield: Recipe makes roughly 28 cookies

Ingredients:

  • 3 bananas ripe, mashed

  • 1 cup chocolate chips

  • 1 cup walnuts, chopped

  • 2/3 cup quick cooking oats

  • 2/3 cup ground flax meal

  • 1/2 cup all purpose flour

  • 1/2 stick butter, melted

  • 1/2 cup peanut butter

  • 1/4 cup maple syrup

  • 1/4 cup chia seeds

  • 1/4 cup whole hemp seads

  • 1/4 cup whole flax seeds

  • 1 egg

  • 1 tablespoon ground cinamon

  • 1 tablespoon vanilla extract

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon fine sea salt

  • 1/8 teaspoon ground clove

Instructions:

In a big mixing bowl, mix together melted butter, egg, mashed bananas, peanut butter, maple syrup, and vanilla extract. Set aside

In a medium mixing bowl, mix oats, flour, flax meal, baking powder, baking soda, nutmeg, ground cinnamon, and sea sea salt with a fork, breaking any clumps and mixing well

Add the dry mixture into the wet mixture and fold until combined, being careful not to over mix or you may end up with tougher cookies.

Fold in the chia seeds, hemp seeds, flax seeds, walnuts, and chocolate chips until fully incorporated.

Using a mini cookie scoop, portion out the cookies onto the 2 large parchment paper lined baking sheets, leaving a bit of space between as the cookies will spread a bit once baked. You should be able to get 12 scoop cookies onto each large baking sheet.

Bake at 325 for 20-22 minutes or until set and lightly browned. Allow to cool for a few minutes on the counter, then serve immediately.
